  • 2 cups jasmine rice
  • 2¼ cups water
  • 1 tablespoon butter
  • 1 garlic clove, minced
  • ¼ teaspoon ground cardamom
  • Pinch of ground cinnamon
  • ½ teaspoon kosher salt

Instructions

  1. Place 2 cups jasmine rice in a fine-mesh strainer and rinse under cold water until the water runs mostly clear. Drain well.
  2. Add the rinsed rice, 2¼ cups water, 1 tablespoon butter, 1 minced garlic clove, ¼ teaspoon ground cardamom, a pinch of cinnamon, and ½ teaspoon kosher salt to a medium saucepan or rice cooker.
  3. If using a saucepan, bring the mixture to a gentle boil over medium-high heat.
  4. Reduce heat to low, cover tightly, and cook for 15 minutes without lifting the lid.
  5. Remove the pan from the heat and let the rice rest, covered, for 5 minutes.
  6. Fluff the rice gently with a fork before serving.

Notes

  • This rice pairs especially well with coconut curries, grilled chicken, pork, and roasted vegetables.
  • For a richer flavor, substitute chicken broth for half of the water.
  • A small pinch of saffron can be added for special occasions.
