These Air Fried Chicken Wings are ultra-crispy on the outside and juicy on the inside, made right in the Breville air fryer with almost no added oil. A simple coating of baking powder and kosher salt helps the skin render and blister, creating that classic fried-crunch without deep-frying. Toss them in your favorite sauce — from Texas Pete with butter to curry or lemon-pepper — for an easy, low-mess main dish or game-day snack that’s ready in about 30 minutes of cook time.
Ingredients
Chicken Wings
- 1 1/2 pounds chicken wing drumettes and flats (about 20 pieces)
- 1 tablespoon baking powder
- 1 teaspoon kosher salt
Optional Sauce Ideas (for tossing after cooking)
- Texas Pete hot sauce melted with butter or oil and a pinch of cayenne pepper
- Curry powder bloomed in butter with salt and garlic powder
- Lemon pepper seasoning mixed with lemon juice

Season the wings
Place **1 1/2 pounds chicken wing drumettes and flats** in a large bowl. In a small bowl, stir together **1 tablespoon baking powder** and **1 teaspoon kosher salt**. Sprinkle the baking powder mixture evenly over the wings and toss until all **1 1/2 pounds chicken wings**, **1 tablespoon baking powder**, and **1 teaspoon kosher salt** are evenly distributed and the wings are well coated.

Arrange wings on rack
Set a baking rack into a roasting pan. Arrange the seasoned **1 1/2 pounds chicken wings** on the rack in a single layer, leaving a little space between each piece so the hot air can circulate and crisp the skin.

Preheat the air fryer
Insert the roasting pan with the rack into the Breville air fryer on rack position 4. Select **AIRFRY / SUPER CONVECTION / 450°F / 30 minutes** and enable Rotate Remind. Press START to preheat, then return the pan to the oven if you removed it while preheating.

Air fry until crispy
Cook the **1 1/2 pounds chicken wings** for about **30 minutes**, flipping the wings once when Rotate Remind signals or at the 15-minute mark. Continue air frying until the wings are deeply golden and the skin is very crisp.

Sauce and serve
Remove the hot **air-fried chicken wings** from the oven. If desired, toss the wings with your favorite sauce, such as **Texas Pete hot sauce melted with butter and a pinch of cayenne**, **curry powder in butter with salt and garlic powder**, or **lemon pepper seasoning with lemon juice**, then serve immediately.
Notes
- Patting the wings very dry before adding the baking powder mixture will help them crisp up even more.
- Baking powder (not baking soda) is key for getting the skin light, blistered, and crispy.
- If your air fryer runs hot, start checking the wings after 25 minutes to avoid over-browning.
