Stuffed Mushrooms

Servings: 6 servings

Description: Mushrooms stuffed with seasoned chicken and baked until golden.

Ingredients:

• 1 chicken breast
• 24 medium mushrooms
• Juice of 1/2 lemon
• 2 T butter or margarine
• 1 clove garlic, crushed
• 1 t chopped parsley
• Salt, pepper
• 1 egg yolk, beaten
• Fine dry bread crumbs

Instructions:

1. Cook chicken and dice finely.
2. Clean mushrooms, reserve and chop stems.
3. Sauté stems and garlic in butter, add broth and parsley.
4. Season, then add chicken and egg yolk.
5. Stuff mushroom caps, top with bread crumbs, and bake at 350°F for 15–20 minutes.
