Mexican-Style Chicken Kiev

Description: This marvelous party dish of spicy cheese-stuffed chicken made a hit with all who tried it in The Times test kitchen.

Ingredients:

• 8 chicken breast halves, skinned and boned
• 1 (7-oz) can diced green chiles
• 4 oz Monterey Jack cheese, cut in 8 strips
• 1/2 C fine dry bread crumbs
• 1/4 C grated Parmesan cheese
• 1 T chili powder
• 1/2 t salt
• 1/4 t ground cumin
• 1/4 t black pepper
• Butter, melted
• Tomato Sauce:
• 1 (1-lb) can tomato sauce
• 1/2 t ground cumin
• 1/3 C sliced green onions
• Salt, pepper
• Hot pepper sauce

Instructions:

1. Pound chicken to 1/4-inch thickness.
2. Stuff with chiles and Jack cheese, roll up.
3. Combine dry coating ingredients and roll chicken in it after dipping in butter.
4. Chill 4 hours or overnight.
5. Bake at 400F for 20 minutes.
6. Make sauce by combining ingredients and heating.
7. Serve chicken with sauce.
