Mexican Fried Chicken

Description: Many Mexican recipes are based on fresh lime marinades. Here, chicken steeps in a piquant mixture of garlic and lime juice, then coated with flour and fried until golden brown.

Ingredients:

  • 1 clove garlic
  • 1 1/2 t salt
  • 2.5 to 3 lb chicken
  • 1/4 C lime juice
  • 1 small onion, finely chopped
  • Oil
  • 1/2 C flour
  • 1 t chili powder

Instructions:

  1. Mash garlic and 1/2 teaspoon salt to a paste.
  2. Rub chicken with garlic mixture. Arrange chicken in shallow glass or plastic dish. Sprinkle with refrigerate, turning occasionally, at least 3 hours.
  3. Remove chicken from marinade and pat dry.
  4. Heat oil (1/4-inch) in skillet until hot. Decrease heat to medium.
  5. Mix together flour, 1 teaspoon salt and chili powder. Coat chicken with flour mixture. Place chicken in skillet skin sides down.
  6. Cover and cook 5 minutes. Uncover and cook 15 minutes.
  7. Turn chicken. Cover and cook 5 minutes longer. Uncover and cook until thickest pieces are done, 10 to 15 minutes. Drain.
