Mai Fun Chicken Salad with Hoisin Dressing

Description: A Chinese-style chicken salad arranged with napa cabbage and hoisin dressing.

Ingredients:

• 3 T rice vinegar or white wine vinegar
• 1/4 C salad oil
• 1 T hoisin sauce
• 2 t sesame seeds
• 2 t minced fresh gingerroot
• Napa or Savoy cabbage leaves
• 2 C mai fun (Chinese rice sticks), prepared
• 1 C finely shredded carrots
• 2 cooked chicken breasts, sliced
• 1/2 C sugar snap peas, blanched and chilled
• Vegetable garnishes (cucumber slices, mushrooms, carrot flowers)

Instructions:

1. Combine vinegar, oil, hoisin sauce, sesame seeds, and ginger in jar. Shake and chill.
2. Line plate with cabbage, layer mai fun, then carrots, chicken, peas, and garnishes.
3. Shake dressing and serve on the side.
