Honey-Spiced Chicken with Orange Sauce

Servings: Makes 6 to 8 servings

Description: Festive Israeli-style chicken with honey, orange juice, and warm spices.

Ingredients:

  • 2 T vegetable oil or chicken fat
  • 2 1/2 to 3 lb broiler-fryer whole chicken, cut up
  • 2 med onions, sliced
  • 1 t salt
  • 1 t paprika
  • 1/8 t pepper
  • 1 C orange juice
  • 1/4 C honey
  • 2 T lemon juice
  • 1/2 t ground ginger
  • 1/4 t ground nutmeg
  • 1/2 C pitted ripe olives
  • 1 T cold water
  • 2 t cornstarch
  • Orange slices

Instructions:

  1. Heat oil in skillet until hot. Cook chicken over medium heat until brown on all sides, about 15 minutes.
  2. Place chicken in baking dish. Top with onions and sprinkle with salt, paprika and pepper.
  3. Mix orange juice, honey, lemon juice, ginger and nutmeg. Pour over chicken. Add olives.
  4. Cover and bake at 350F until done, 45 to 60 minutes.
  5. Arrange chicken on platter. Pour juices into saucepan and bring to boil.
  6. Mix water and cornstarch, stir into juices. Cook until slightly thickened. Garnish with orange slices.
