Cold Chicken Breasts Tarragon

Servings: 6 to 8 servings

Description: A chilled tarragon-flavored chicken perfect for a patio party or picnic.

Ingredients:

• 1/4 C butter or margarine
• 1 t salt
• 1/4 t black pepper
• 1/2 t paprika
• 4 chicken breasts, boned
• 1 C dry white wine
• 2 t dried tarragon, crushed
• Cherry tomatoes
• 1/2 C whipping cream
• 1 T prepared horseradish

Instructions:

1. Melt butter. Sprinkle chicken with salt, pepper, and paprika. Brown in butter and remove.
2. Add wine and tarragon to skillet, scrape brown bits. Return chicken and simmer 30 minutes.
3. Cool chicken in liquid, then chill.
4. Whip cream and fold in horseradish. Hollow cherry tomatoes and fill with cream mixture.
5. Slice chicken and arrange on platter. Garnish with filled cherry tomatoes.
