Coconut Chicken

Servings: Makes 8 servings

Description: Golden fried chicken served with a rich coconut sauce and garnished with toasted coconut.

Ingredients:

  • 2 T shredded coconut
  • 4 chicken breasts (about 4 lb)
  • 1 C canned coconut milk
  • 1/2 C chicken broth
  • 1/4 C sugar
  • 2 T lemon juice
  • 3 T plus 1 1/2 t cornstarch
  • 2 t ginger root juice
  • Oil for frying
  • 1 1/4 t salt
  • 1/8 t white pepper
  • 1/4 C flour
  • 1/4 C water
  • 1/4 t baking soda
  • 1 egg white

Instructions:

  1. Toast coconut. Cut chicken into strips.
  2. Make sauce: boil coconut milk, broth, sugar, lemon juice, cornstarch, ginger juice, oil, salt, pepper until thick.
  3. Mix batter with flour, water, cornstarch, oil, baking soda, salt, egg white.
  4. Dip chicken and fry until golden. Slice and place on platter.
  5. Pour sauce over chicken and garnish with toasted coconut.
