Chicken Burgers with Mustard Sauce

Servings: 6 to 8 servings

Description: Savory chicken and veal patties served with a tangy mustard sauce.

Ingredients:

  • 3 T Dijon mustard
  • 1 T Coleman's mustard
  • 1 T oil
  • 1/2 onion, chopped
  • 1/2 stalk celery, chopped
  • 1/4 C white wine vinegar
  • 2 C brown stock
  • 1 1/2 t crushed black pepper
  • Dash salt
  • Dash Worcestershire sauce
  • 4 boneless, skinless chicken breast halves
  • 1 lb lean veal
  • 1 T chopped parsley
  • 1 1/2 t salt
  • 1/2 t white pepper
  • Few drops hot pepper sauce
  • 2 slices white bread
  • 1/4 C hot milk
  • 1 egg
  • 2 T oil
  • 1 medium onion, sliced
  • 1/4 lb mushrooms, sliced
  • 1 bay leaf
  • Dash fresh thyme
  • 1 C dried bread crumbs
  • 1/4 C butter

Instructions:

  1. Make mustard sauce by sautéing onion and celery, deglaze with vinegar, add mustard and stock. Simmer and strain.
  2. Grind chicken and veal. Mix with herbs, seasonings, soaked bread, egg, and sautéed mushroom mixture.
  3. Form into patties, coat with bread crumbs, and brown in butter.
  4. Bake patties at 375°F for 10 minutes before serving with mustard sauce.
